Today, 80 years after the invention of white chocolate as the third type after dark and milk, Barry Callebaut, the world's leading manufacturer of high-quality chocolate and cocoa products, shows the fourth type in Ruby chocolate, which is made from Ruby cocoa beans. Ruby Chocolate has an intense taste and a characteristic reddish tint.
Ruby beans are unique because fresh berry-fruity and color precursors are naturally present in them. Cocoa beans come from different regions of the world. The component has a specific set of attributes that Barry Callebau managed to unlock an innovative process that took many years to develop.
According to quantitative research conducted by independent international marketplace and consumer agency Haystack, Ruby Chocolate meets consumer needs that have never been done before. Ruby, like dark, milk and white chocolate, is expected to be introduced in different product categories.
The invention - Ruby Chocolate - is the work of Barry Callebaut's global research centers based in France and Belgium - part of a global network of 28 research centers, Jacobs University and more than 175 years of experience in the field of research and production.

Ruby Chocolate has been tested and verified through extensive consumer research conducted by independent global research agencies Haystack and Ipsos in the UK, US, China and Japan.
These studies tested the consumer attractiveness and intent of Ruby buyers, indicating that consumers would buy Ruby chocolate at different prices.
